Position Overview

The Division of Developmental Disabilities is seeking to hire a Dietary Manager I for the Shapiro Center located in Kankakee, Illinois to serve as an Assistant Manager of a comprehensive seven day a week food services/dietary program. Provides direction to food services staff. Assists in developing and implementing procedures for food procurement, food storage, inventory control and food distribution. Maintains a productive work environment and sanitary standards in compliance with local and state Department of Public Health regulations.

Job Responsibilities

Serves as the Assistant Manager of a comprehensive seven day a week food services/dietary program at the Shapiro Center.
Serves as working supervisor.
Provides assistance to the Dietary Manager II, in planning and implementing the preparation of regular and modified diets in accordance with the clinical recommendations of the dieticians and interdisciplinary team.
Serves as liaison with direct care staff to verify satisfactory quality, quantities and delivery of foods.
Assists in developing and implementing procedures for food procurement, food storage, inventory control and food distribution to be in compliance with facility, federal, local and state Public Health Department regulations.
Develops and conducts orientation and in-service training to enhance line supervisor’s supervisory skills and techniques.
Maintains a productive work environment in compliance with local and state Department of Public Health regulations.
Initiates special menus for holidays in conjunction with the dieticians and Dietary Manager II.
Performs other duties as required or assigned which are reasonably within the scope of duties enumerated above.

Minimum Qualifications

Requires knowledge, skill and mental development equivalent to the completion of four (4) years of college with courses in dietetics.
Requires one (1) year of professional experience in a large-scale food service program.
*Requires possession of a Food Service Sanitation Manager Certificate (FSSMC) issued by the Illinois Department of Public Health or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).
*This requirement is set forth in the Food Handling Regulation Enforcement Act (410 ILCS 625/3).

*Qualifying state employees in the employee Upward Mobility program may complete combinations of specific proficiency tests and training programs leading to a certificate of proficiency in lieu of the stated requirements for this class.

Preferred Qualifications

One (1) year of professional experience in dietetics and food services management including nutritional values, costs and accounting for a public or private organization.
Two (2) years of professional experience using modern methods, materials and appliances used in large scale food preparation and service for a public or private organization.
Two (2) years of professional experience working with health and sanitary requirements applicable to a large-scale food service.
Two (2) years of professional experience planning and directing the preparation of modified diets and menus for a public or private organization.
Two (2) years of professional experience directing subordinates in the planning, preparing and serving general and special diets and other food services.
One (1) year of experience communicating effectively both verbally and in writing.

Requires the ability to travel in the performance of job duties.
Requires ability to pass the IDHS background check.
Requires ability to pass a drug screen for drugs prohibited from recreational use under Illinois Law.
